Watermelon Salad


The kids might be back to school, but with the help of global warming and a whole lot of humidity, it feels like 42ºC out there today. Eating isn’t feeling like a big priority, but hydration does. Good thing that along with heat, summer brings lots of watermelon!
This is a super fancy looking but crazy easy salad to whip up. Thinly sliced fennel, and as much watermelon as you like. I topped mine with some torn basil (but you could add mint to that as well), a handful of microgreens, in this case pea shoots, some pistachios and a sprinkle of sumac for a lemony punch. If you need a dressing to make your salad, just drizzle a little olive oil, lemon juice, flaky salt and pepper.
